iKORE combi oven (6x2/3GN) 0623 FAGOR CONCEPT

Electric combi oven iKORE for 6 GN 2/3 trays, right opening and washing system. Fagor's Concept series is designed for the more conservative and faithful to traditional gastronomic methods, but looking for maximum efficiency quickly and easily.

• There are 4 main electric versions of the model available depending on the steam generation system PureSteam (with steam generator) or DirectSteam (injection) and depending on the intelligent washing system (Spray mode or iWashing). Each version can be factory-installed with an S-shaped retractable shower.

FUNCTIONS:

• FagorDial: 2.8'' digital display, rotary knob /potentiometer/ and push-button function for configuring and confirming the entered parameters;
• ClimaControl: 1) Humidity management and control through direct measurement with a humidity sensor. 2) 10% regulation capacity;
• Fagor Recipe Center: 100 factory-set and culinary-tested recipes. Storage capacity for more than 100 nine-step recipes;
• Air and water cooling (rapid chamber cooling function);
• Cooking modes: low steam temperature 30-98º, steam 99º, super steam 100-130º, mixed 20-300º and convection 20-300º;
• Drying the chamber for crispy baked goods;
• DeltaT - function, delicate cooking;

DIRECTSTEAM VERSIONS: Steam generation by spraying/injecting water into the turbine, atomizing the water and converting it into steam.

PURESTEAM VERSIONS: Higher steam saturation in the chamber compared to the injection version. Pure steam generator with automatic filling function. Impurities in the water are deposited in the boiler/generator, facilitating the maintenance of the combi oven. The steam generator is equipped with a scale detector and a semi-automatic scale removal system. Automatic and adjustable generator emptying every 24 hours of cooking.
