Rapid cooling and freezing cycles, configurable to be controlled by time or by temperature probe placed in the core of the food (if the probe is not used, the cycle is automatically controlled by time). Same as cooling , as well as freezing, two types of rapid cooling cycles can be performed: Shock cycle: Defined by default in freezing cycles, it performs the cycle by keeping the temperature in the chamber constant at -20ºC.And cycle defined by default in refrigeration systems cycles, it performs an initial cycle, keeping the temperature in the chamber at 0ºC.The duration of the cooling cycles: 90 minutes Freezing cycles: 240 minutes .Five special cycles for defrosting, hardening of ice cream, drying, disinfection of fish and heating of the probe for skewers. At the end of the cycle, the rapid cooler works by maintaining a temperature between +2 and +4 ºC, or as a softener to maintain frozen foods, below -18 ºC.
