Fixed boiling pans with cylindrical structure and large capacity - 200 liters, suitable for placement in transit areas with small dimensions, where appliances with sharp edges can cause ergonomic problems and make movement difficult, allowing it to be used comfortably from different angles. Indirect and indirect pressure heated models (autoclav), operating on gas or electricity.

• Vessel with bottom in AISI-316 stainless steel and thickness between 20/10 and 40/10, suitable for products that are particularly acidic.
• Walls in AISI-304 stainless steel with thickness between 20/10 and 40/10.
• Double wall in models with indirect heating - bain marie.
• Lid in AISI-304 stainless steel with a thickness of 15/10, with balanced springs and anathermal handle / non-heating.
• Supporting structure in AISI-304 stainless steel.
• External finish Satin AISI-304.
• Adjustable feet in stainless steel.
• Thermal insulation guaranteed by high-density ceramic plates.
• Tank drain with removable filter.
• Front drain tap with insulated (athermal) handle.
• Pressure gauge to control the pressure inside the double wall.
• Manual air vent valve to reduce the pressure in the chamber during heating.
• Water is added to the tank through a tap with a removable outlet.

HEATING

GAS MODELS: direct heating, steam pressure heating, indirect heating, indirect pressure heating

• Burners - high-efficiency tubular stainless steel construction.
• Manual piezoelectric ignition and pilot flame.
• Smoke exhaust grille.
• Valve with safety valve and thermocouples (direct heating version).

INDIRECT ELECTRIC MODELS:

• Heating is achieved by heating elements immersed in Incoloy alloy with adjustable power via an energy variator.
• Safety thermostat that ensures that the machine does not operate in case of overheating or insufficient water.
• Water level control in the double wall with tap and automatic water filling option.
• Standard operating voltage of 400V-3N 50Hz

INDIRECT STEAM, PRESSURE HEATING:

• Heated with steam (via connection) and a valve that allows the gradual addition of steam to the vessel.
• Indirect heating equipment: pressure control in the double wall is carried out by a safety valve set at 0.5 bar, manual valve pressing and pressure gauge.
• The pressure or autoclave versions allow cooking cycles to accelerate during the day. They are equipped with a silicone rubber hermetic joint, hermetic closure clamps and a safety valve set at 0.05 bar.
