According to EU-631, the term Gastronorm or the abbreviation "GN" refers to the standardized format for containers used in commercial kitchens or buffets for the preparation, processing, preservation and storage, cleaning and transportation of all types of food.
This standard format allows the organization and optimization of space in kitchen equipment, such as refrigerators and freezers, ovens, shelves, carts, convection ovens, carts and baskets or modules for the dishwasher industry, transport equipment, thermal insulation for buffets, etc.
These containers can be made in several standard sizes, up to a total of 9 different sizes, and their construction can vary depending on their purpose; among them you can find stainless steel, polycarbonate, polypropylene, melamine and even porcelain.
