The process of registration and approval by the BFSA includes the following steps and advice with which we could assist you:
Preparation of project documentation
To obtain permission from the BFSA to introduce a technological project in a commercial kitchen, you must first prepare the necessary project documentation which demonstrates that all facilities and processes meet food safety requirements. The documentation includes:
- Technological map: A document that describes the technologies and processes that will be used in your commercial kitchen. The technological map includes information on:
- Food preparation processes;
- Workstations and their organization;
- Hygienic and sanitary conditions;
- Food storage processes and available cold storage.
- Construction and installation project: In the case of building a new kitchen facility or carrying out a significant modernization, a construction project is required to demonstrate that all installations (water supply, sewage, ventilation and electrical installation) meet the requirements of the BFSA and the relevant building and sanitary standards.
- Technical passports of the appliances: When new or specialized appliances are used, their passports and certificates must be provided, which prove that the equipment meets European safety standards for use in food establishments.
Compliance with food safety requirements
- Food processing: It is a necessary requirement that food processing processes (temperature conditions, storage, disinfection, etc.) meet Regulation (EO) No 852/2004 (responsible for food hygiene).
- Safety control systems: Requirements related to self-control systems, such as HACCP (Hazard Analysis and Critical Control Points), which ensure that kitchen processes do not pose risks to the health of consumers.
- Cleanliness and disinfection: Requirements for the use of safe cleaning agents and proper cleaning of work surfaces and appliances.
Preparation of a safety and hygiene plan
The safety and hygiene plan provides for all necessary measures to comply with hygiene requirements in the kitchen. It includes:
- Hygiene activities: Cleanliness of floors, walls, work surfaces and sanitary facilities.
- Staff training: A program for training employees on food safety, hygiene practices and the operation of equipment.
- Temperature maintenance regimes: Strict control of food storage and preparation temperatures (hot storage, cold storage, etc.).
Project presentation to the BFSA (registration)
In the next step the prepared documents are submitted to the relevant territorial directorate of the BFSA. This step includes:
- Facility registration: BFSA inspectors check whether the project meets food safety and hygiene standards.
- Documentation review: BFSA reviews the project documentation and assesses the compliance of your equipment and technology with food safety standards.
- On-site inspection: An inspection can be arranged by a BFSA representative to visit the site and ensure that it meets hygiene and safety requirements.
Approval and issuance of a permit
- If all regulations are met, BFSA issues a permit for the operation of the food facility, which entitles you to start working with the new technological equipment. This permit is mandatory for any new catering establishment or for the renovation of existing facilities.
Periodic inspections and control
- Once the project is approved and the equipment is put into operation, BFSA carries out periodic inspections and checks to ensure that food safety standards are being met. The inspections can be based on documents or on-site.
